Hot spots are the silent culprit behind most cooking failures. A hot spot is a concentrated area of intense heat — typically directly above a burner element — surrounded by cooler zones. Protein proteins in meat and eggs seize and burn in the hot area while remaining undercooked at the edges. Sauces scorch at the center while barely simmering at the rim.
